FAQ: Un-Maximizing

In more recent versions of Squeak, the full screen on/full screen off are to be found in the "Appearance..." submenu of the screen menu.
With MS Windows, you can also hit F2 to bring up the "Squeak VM Preferences" menu, from which you can deselect "Run full screen".
Missing File (/squeak/uploads/FullScreenOnOff.morph) is a tiny morph by Mathieu van Echtelt which will turn full-screen on and off.
The following code does the job:
